Yum


After grocery shopping this afternoon, I whipped up these yummy cupcakes. I went to visit Bryan at work and took him a few. The poor guy is working 36 hours straight at EMS! So hopefully these (and seeing me!) made his evening a little better :)

Apple cupcakes with caramel frosting

Ingredients:
  • 1 1/2 cups vegetable oil
  • 2 cups sugar
  • 2 large eggs
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla
  • 2 1/2 cups flour
  • 3 cups finely chopped or grated raw apples
  • 1 cup chopped pecans (optional)
Directions:
Measure vegetable oil into large mixing bowl. Add sugar and eggs. Beat on low speed until creamy. Sift flour and measure into mixing bowl. Add baking soda and baking powder. Add a small amount of the flour mixture at a time to the creamed mixture. Beat well after each addition. When all flour has been added, or when batter becomes very stiff, remove electric mixer. Fold in apples and pecans. Pour into lined cupcake tin. Bake at 350 degrees for 20 minutes.

Caramel Frosting

Ingredients:
  • 1 1/2 cups butter
  • 1 cup packed brown sugar
  • 1/4 cup milk
  • 2 cups powdered sugar
Directions:
In saucepan, melt butter over medium heat. Stir in brown sugar. Heat to a boil, stirring constantly; reduce heat to low. Boil and stir for 2 minutes. Stir in milk. Heat to boiling; remove from eat. Cool to lukewarm, about 30 minutes.
Gradually stir in powdered sugar. Beat with spoon until smooth and spreadable.

Makes about 36 cupcakes and 2 cups frosting
